Chicken biryani is a popular Indian and Pakistani dish that consists of spiced chicken and fragrant rice. Here's a recipe to make chicken biryani:
Ingredients:
- 1.5 lbs bone-in chicken pieces
- 2 cups basmati rice
- 2 onions, thinly sliced
- 2 tomatoes, diced
- 1/2 cup plain yogurt
- 2 tbsp biryani masala
- 2 tsp ginger paste
- 2 tsp garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 3 tbsp ghee or oil
- 1/2 cup chopped fresh cilantro
- 1/4 cup fried onions (optional)
Instructions:
- Rinse the rice in cold water until the water runs clear, then soak the rice in water for 30 minutes.
- In a large pot, heat the ghee or oil over medium-high heat. Add the cumin seeds and fry until they start to sizzle.
- Add the sliced onions and fry until golden brown.
- Add the chicken pieces and cook until browned on all sides.
- Add the diced tomatoes, ginger paste, garlic paste, and all the spices (biryani masala, coriander powder, turmeric powder, red chili powder, and salt). Mix well and cook for 5 minutes.
- Add the yogurt and mix well. Cook for another 5-10 minutes, until the chicken is cooked through.
- Drain the rice and add it to the pot with the chicken. Mix well and add enough water to cover the rice by about an inch.
- Bring the pot to a boil, then reduce the heat to low and cover the pot tightly. Cook for 20-25 minutes, or until the rice is fully cooked.
- Turn off the heat and let the pot sit for 10-15 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro and fried onions (if using). Serve hot.
