Chicken biryani is a popular Indian and Pakistani dish that consists of spiced chicken and fragrant rice. Here's a recipe to make chicken biryani:

Ingredients:

  • 1.5 lbs bone-in chicken pieces
  • 2 cups basmati rice
  • 2 onions, thinly sliced
  • 2 tomatoes, diced
  • 1/2 cup plain yogurt
  • 2 tbsp biryani masala
  • 2 tsp ginger paste
  • 2 tsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 3 tbsp ghee or oil
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fried onions (optional)

Instructions:

  1. Rinse the rice in cold water until the water runs clear, then soak the rice in water for 30 minutes.
  2. In a large pot, heat the ghee or oil over medium-high heat. Add the cumin seeds and fry until they start to sizzle.
  3. Add the sliced onions and fry until golden brown.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Add the diced tomatoes, ginger paste, garlic paste, and all the spices (biryani masala, coriander powder, turmeric powder, red chili powder, and salt). Mix well and cook for 5 minutes.
  6. Add the yogurt and mix well. Cook for another 5-10 minutes, until the chicken is cooked through.
  7. Drain the rice and add it to the pot with the chicken. Mix well and add enough water to cover the rice by about an inch.
  8. Bring the pot to a boil, then reduce the heat to low and cover the pot tightly. Cook for 20-25 minutes, or until the rice is fully cooked.
  9. Turn off the heat and let the pot sit for 10-15 minutes.
  10. Fluff the rice with a fork and garnish with chopped cilantro and fried onions (if using). Serve hot.
