Afghan chicken:
Ingredients:
- 4 chicken breasts
- 1 cup plain yogurt
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 tablespoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- 1/4 cup chopped fresh cilantro
Instructions:
- In a large bowl, mix together the yogurt, olive oil, garlic, paprika, coriander, cumin, turmeric, salt, pepper, and lemon juice.
- Add the chicken breasts to the bowl, and turn them in the marinade until they are completely coated. Cover the bowl with plastic wrap, and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 400°F (200°C).
- Remove the chicken breasts from the marinade, and place them on a baking sheet lined with foil or parchment paper.
- Bake the chicken breasts in the oven for 25 to 30 minutes, or until they are cooked through and golden brown on the outside.
- Garnish the chicken with chopped cilantro, and serve with rice, salad, or your favorite side dishes.
