Aloo ki Sabzi, also known as potato curry, is a popular North Indian dish that is simple to make and is enjoyed with rice, roti, or bread. Here is a recipe for making Aloo ki Sabzi:

Ingredients:

  • 4-5 medium-sized potatoes, peeled and cut into small pieces
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2-3 green chillies, chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt to taste
  • 1/2 cup water
  • 2 tablespoons chopped coriander leaves for garnish

Instructions:

  1. Heat the oil in a pan over medium heat. Add the cumin seeds and let them splutter.

  2. Add the chopped onions and green chillies and sauté until the onions turn translucent.

  3. Add ginger and garlic paste and sauté for another minute.

  4. Add the coriander powder, turmeric powder, red chilli powder, and salt. Mix well.

  5. Add the chopped potatoes and mix everything well, so that the spices coat the potatoes evenly.

  6. Add water, cover the pan, and let it cook for 15-20 minutes or until the potatoes are cooked through. Stir occasionally.

  7. Once the potatoes are cooked, turn off the heat and garnish with chopped coriander leaves.

  8. Serve hot with rice, roti, or bread.
