kathal ki sabzi

Kathal ki sabzi is a popular North Indian dish made with raw jackfruit, which is a vegetable that is commonly found in India during the summer months. Here is a simple recipe to make kathal ki sabzi:

Ingredients:

500g raw jackfruit (kathal), peeled and chopped into small pieces
2 onions, chopped
2 tomatoes, chopped
2-3 green chilies, chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons oil
1 tablespoon chopped coriander leaves
Instructions:

Heat the oil in a pan on medium heat. Add cumin seeds and let them crackle.

Add chopped onions and green chilies and sauté for a few minutes until the onions turn golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they become soft.

Add turmeric powder, coriander powder, red chili powder, and salt to taste. Mix well.

Add chopped jackfruit and mix well. Cover the pan and let it cook for 10-15 minutes on low heat.

Check the jackfruit for tenderness. If it's not tender yet, cover and cook for another 5-10 minutes until it becomes tender.

Once the jackfruit is tender, remove the lid and cook for another 5-7 minutes until the sabzi becomes dry.

Garnish with chopped coriander leaves and serve hot with roti or rice.
